Ingredients:
• 1 #10 can Serious Bean Co. Chipotle Beans
• 2 cups red onion, diced 1/4″
• 1 cup lime juice
• 2 dozen large avocados
• 2 cups cilantro, chopped
Instructions:
Drain the beans and set aside.
Combine the liquid from the beans with the onion and lime juice in a bowl. Remove the pit and skins from the avocados then add to the bowl.
Smash the avocados using a potato masher.
Stir the beans and cilantro into the avocado mixture.
Serve chilled with tortilla chips or fresh veggies for dipping.
YIELD: Approximately 6 1/2 quarts.
