Ingredients:
• 2lbs bacon (raw), diced 1/2″
• 4 cups yellow onion, diced 1/4″
• 1/4 cup garlic, minced
• 4 cups beer (or water)
• 1 #10 can Serious Bean Co. Chipotle Beans
Instructions:
Heat a skillet over medium heat and fry bacon until crisp, then add the onions.
Cook the onions until soft, then add the garlic.
Once the garlic is browned, carefully add the beer (or water).
Use a spoon to scrape the browned bits from the bottom of the skillet, then add beans. Coarsely smash the beans with a potato masher or spoon and reduce to low heat. Simmer until thickened.
Serve warm or chilled. We like ours warm with corn chips.
NOTE: The dip will continue to thicken as it cools. If planning to serve cold, be aware of how thick it gets when simmering.
