Chipotle Bean Soup with Chorizo Sausage

Ingredients:

• 1 #10 can Serious Bean Co. Chipotle Beans
• 15 quarts chicken stock
• 7-1/2 pounds ground chorizo sausage
• 3 quarts sweet onion, diced
• 3 quarts celery, diced
• 3 quarts carrot, diced
• 5-1/2 pounds corn
• 10-12 bay leaves
• 2 cups Worcestershire sauce
• 1/3 cup kosher salt
• 3 Tbsp ground black pepper

Pre-heat a medium to large sauté pan and add olive oil.
Brown chorizo until cooked through and crumbled small.
Drain excess liquid/fat.
Pre-heat medium sauce pan, add olive oil and diced onion and cook until somewhat translucent.
Add beans, diced tomatoes, corn, cooked chorizo sausage and water.
Bring to a simmer for 15 minutes.
Add salt & pepper, stirring frequently.
Serve immediately in bowls, garnished with queso fresco cheese & chopped cilantro.
