Ingredients:
• 1 #10 can Serious Bean Co. Chipotle Beans
• 2 cups sour cream
• 2 cups instant mashed potates
Toppings:
• 2 cups sour cream
• 2 lbs raw bacon, cooked & crumbled or 2 cups bacon bits
• 2 cups cheddar cheese, shredded
• 1 cup chives, chopped
Instructions:
Heat chipotle beans in a skillet over medium heat.
While beans are heating, combine instant mashed potatoes and sour cream in a bowl. Smash the beans with a potato masher or spoon and reduce to low heat.
Add the potato and sour cream mixture to the skillet and stir well.
Transfer to a pan and add toppings.
Serve warm with crispy waffle fries or potato chips.
YIELD: Approximately 6 quarts
