Ingredients:
• 3lbs, 12oz. cream cheese, diced 2-3″
• 1 #10 can Serious Bean Co. Buffalo Beans
• 3lbs, 8oz. diced pimientos, drained (divided)
• 4lbs sharp cheddar cheese, shredded (divided)
• 2 Tbsp ground black pepper
• 2 Tbsp granulated onion
• 2 Tbsp granulated garlic
Instructions:
Use a stand mixer fitted with a paddle attachment to whip the cream cheese until light and fluffy.
Working in batches, use a food processor to blend the buffalo beans with half of the pimientos and half of the cheddar cheese. Transfer to the stand mixer with the cream cheese.
Add the seasonings, and whip the mixture until everything is completely combined.
Add remaining pimientos and shredded cheddar.
Mix just enough to evenly distribute the cheese throughout the spread.
Serve chilled spread on bread, or with crackers and veggies for dipping. Try it warm cooked into a grilled cheese sandwich on buttered bread.
YIELD: Approximately 8 quarts
